Norwi’s Spaghetti Squash Quiche Recipe

Hi All!! Our amazing Team Sun Rays bikini athlete, Norwi has another great recipe for you all!! This one is a spaghetti squash quiche! Great for breaks, lunch, or dinner, an easy grab and go option that you can take with you to have at work as a healthy lunch, pair it with some fresh fruit and you’ve got an awesome meal! Enjoy!

Spaghetti Squash Quiche

Preheat Oven on 415F
6 oz Cooked Spaghetti Squash (see **)
1 Whole Egg, beaten
2 TBSP Coconut Flour
1/2 tsp Baking Powder
4 tsp Parmesan
1 oz Fat Free Mozzarella Cheese
=>Mix all the ingredients, grease the pie pan, pour the spaghetti dough and flatten it on the pie pan, Baked it for 25-30 mins, let it cool

Spaghetti Squash
Preheat Oven @375F
Cut it half, remove seeds
Spay baking sheet with PAM (I used coconut spray)
Spray the Spaghetti squash with PAM
Bake it cut side down for 40-60mins, depending on the size of the squash
Once it’s done baking, fluff the interiors with fork to make spaghetti like.

Quiche Fillings
Preheat Oven @350
1 Egg
6 Egg Whites
1/4 Cup Fat Free Milk (or any milk of choice)
1.5 oz Fat Free Cheddar
1.5 oz Fat Free Mozzarella
Parsley (you can use any greens of your choice, I ran out of spinach that why I used parsley)
a few dashes of Smoked Paprika or any seasonings that you like
ground pepper
.5 oz Fat Free Cheddar (sprinkle right after the quiche is cooked)
.5 oz Fat Free Mozzarella (sprinkle right after the quiche is cooked)
=> Mix all the ingredients in the medium size bowl, pour it slowly on the spaghetti crust, stir lightly, Baked it for 20 mins or until it’s cooked
* I used a toothpick to check if the egg whites are cooked.
After taking it out of the oven, sprinkle the remaining cheese.

You are more than welcome to seasoned it with salt, I didn’t put any because I know that the cheese has sodium already.
