Re-envisioning Barbecue: Mediterranean Grilled Salmon

Hi All, today I wanted to show you one of my all-time FLAVORITE (yes, flavorite), types of food, Mediterranean. As an advocate for putting tzatziki on just about everything, here’s a high protein, healthy grilling option that will light a fire on your summer barbecues this July.

What you’ll need:

  • 4 tbsp chopped fresh cilantro
  • 1 tbsp chopped fresh parsley
  • 2 tbsp chopped fresh dill
  • 1 tbsp minced garlic
  • 2 tbsp lemon juice
  • 4, 6 oz salmon fillets, raw
  • Cracked black pepper, to taste
  • 4 green olives, chopped
  • 4 thin slices lemon
  • one container pre-made tzatziki

What you’ll do:

Coat grill rack or broiler pan with cooking spray. Turn grill heat to high. Position cooking rack 4- 6 inches from grill heat.

In a small bowl, combine the cilantro, parsley, dill, garlic and lemon juice. Spray salmon with cooking spray and sprinkle with salt and pepper to taste. Top each fillet with the herb-garlic mix. Place the fish herb-side down on the grill. When the edges turn white, after about 3 to 4 minutes, put aluminum foil down on the cooler side of the grill and turn the fish over, placing it on the aluminum foil on the cool side of the grill. Reduce heat. Grill for 4 more minutes or until until the fish is 145 degrees F.

Plate salmon and top with tzatziki.  Garnish plates with green olives and lemon slices. Serve with our Mexican-inspired cole slaw for a healthy family-friendly meal!!!
