Hi All!!! Throughout July’s fun in the sun barbecue season, we want you to re-envision the way you barbecue! Take those recipes that you love and add a healthy twist to them!! Here I rehabbed a recipe I found on the Food Network’s website for Cuban-inspired burgers!! The rehab keeps the flavor, but ups the micronutrient-rich veggie intake and swaps high cholesterol foods for low cholesterol foods, so you can enjoy traditional meals while keeping your health a priority. The major trick to this is the TYPE of meat you use, it’s a misconception that all red meat is bad. There are red meats that are even more lean than chicken breast. In this recipe rehab, I swapped the chuck roast and utilized red meats that ARE LESS FATTENING THAN CHICKEN BREAST!!!!!!
Preheat the grill to high. Form the meat into 4 (1/4-inch thick) burgers and season with salt and pepper on both sides. Grill 2 to 3 minutes on both sides. Burgers will be about medium, adjust time according to your preference. Remove burgers from heat and reduce heat to medium-low.
While burgers grill, combine greek yogurt and roasted garlic in a small bowl and season with salt and pepper, to taste. Spread both sides of each bun or lettuce wrap with garlic-yogurt mix and mustard. Top buns with burger patties, smoked turkey and pickles.
Finally, wrap prepared burgers (buns and all) in aluminum foil and place on grill. Press burgers using a heavy cast iron skillet or even a brick. Press for 30 seconds to one minute with the lid of the grill down.
