Re-envisioning Barbecue: A Mexican Twist on a Dutch Classic; Cole Slaw

Hi All, today I wanted to show you a fun way to utilize a client favorite low-cal, super healthy snack that’s perfect for work, home, and also makes a great healthy cole slaw that tastes fantastic. Jicama is a crunchy, fiber-rich Mexican-derived turnip and this recipe makes even people like me, who can’t stand cole slaw, fall in love!

What you’ll need:

  • 1 tbsp + 2 tsp fresh lime juice
  • 1/4 tsp ground cumin
  • salt
  • 1 cup fat free greek yogurt
  • 1 medium or 1 lbs worth of jicama, peeled & thinly sliced
  • 2 cups grated carrots
  • 3 tbsp minced cilantro
  • 5 slices pickled jalapeno

What you’ll do:

  • In a small bowl, whisk together lime juice, greek yogurt, cumin and salt.
  • Toss the remaining ingredients together into a large bowl
  • Top with dressing

Enjoy this fun Mexican cole slaw rendition with caribbean inspired chicken kebobs or Cuban-inspired burgers for a low-cal, high quality, awesome summer barbecue.
